Rooster's Beak

So, I realize pico de gallo (Spanish for "Rooster's Beak") isn't really hard to make, but it is one of my favorites and I wanted to share!

Here's how I do it:

2-3 seeded tomatoes; coarsely chopped
1/2 sweet (1015) onions; coarsely chopped
1 fresh garlic clove; finely chopped
1 handful of fresh cilantro; finely chopped
1 juice of a lime
Cumin, salt and freshly ground pepper to taste

Mix it all up and let it "marinate" for a couple of hours; Serve over grilled chicken (or with fajitas, tacos, charro beans or just eat with a chip!) YUM!

This will keep for several days, but drain off excess liquid before serving.
